Strawberry Banana Acai Bowl
Over the weekend, my husband and I took a mini road trip over to Madison to see the 2017 CrossFit Games. Amongst other things (like actually watching the competitions), I spent some time drooling over Rogue’s gym equipment and enjoying an extra large acai bowl. Though the cost of the bowl itself made me gag a little bit ($15+ for one), it definitely re-sparked my love for a good bowl.
I realized I haven’t created a new acai bowl recipe in over four months now (gasp!) and had to rectify that situation immediately. Hence your latest & greatest Strawberry Banana Acai Bowl! It is a very basic version (though definitely not lacking in flavor), and can be tweaked depending on the ingredients you have on hand.
Enjoy!
Strawberry Banana Acai Bowl
The base:
2 packets Frozen acai berry
(I love Sambazon’s unsweetened acai)
3/4 of a Banana
4-5 Strawberries
1/2 cup Water
The toppings:
1/4 cup Granola
(I used Bear Naked’s V’nilla Almond)
2 large spoonfuls Vanilla yogurt
(I used about half of one 5.3 oz container of Siggi’s)
3-4 Strawberries, sliced
1/4 Banana, sliced
Run the packets of frozen acai berry under warm water for about 5 seconds. Try not to melt them too much, as we want the acai to be easy enough to blend but still thick enough to eat with a spoon. Add the acai, banana, strawberries and water into your blender and blend until smooth. Pour your acai mix into a bowl, and finish it off by sprinkling the toppings right on top.
Pro tip: Break the acai up into chunks while it is still in the package (after you run it under water), so it blends a little more easily. I have also found that hitting the acai packet with a rolling pin breaks it up very nicely for blending (and let’s be real – it’s kind of entertaining). I think you’ll thoroughly enjoy it.
