Peanut Butter Nice Cream

Happy national ice cream day!

Okay, actually I’m a day late. But if you know anything about me, you know ice cream is a major weakness of mine. So here’s a nice cream recipe anyway!

I love all kinds of ice cream (although my husband’s favorite is Superman and I have to tell you, I could take it or leave it). Lately, nice cream has been my go to because it is healthy, and extremely delicious! Nice cream is basically an ice cream alternative – and it simply made with frozen bananas. You can blend the bananas and mix it in with almost any flavor! So fun, and also insanely easy. In fact, this recipe only took me 10 minutes to make!

Peanut Butter Nice Cream

3 Bananas, frozen

2 tbsp Peanut Butter, split in two portions

1/2 tsp Vanilla

1/2 tbsp Cocoa Nibs

Pinch of sea salt

Blend together the frozen bananas, 1 tbsp PB, vanilla and sea salt in a food processor or blender. Once smooth, pour the nice cream into a medium sized bowl or pan. Stir in the remaining tbsp PB and cocoa nibs.

You can then enjoy your Peanut Butter Nice Cream right away, or put the bowl into the freezer (covered) for another half an hour for a harder, icier consistency! Makes two servings.
