Goat Cheese Scramble
Good morning! Saturdays are my absolute favorite – you will usually find me cuddled up with a cup of coffee, a good book and taking a break to make a delicious and filling breakfast. Lately, my go-to has been this goat cheese scramble recipe. It is so creamy and delicious, I guarantee it won’t disappoint. Makes enough for 1 person, so be sure to adjust accordingly.
Goat Cheese Scramble
1 tbsp Butter
3 Eggs, whisked with a dash of milk
2 tbsp Goat cheese
Dried parsley, pinch
Pepper, pinch
Sea salt, pinch
Whisk eggs together in a small bowl with a dash of milk until well blended and slightly foamy.
Heat skillet over medium high heat. The skillet is ready for the eggs when a drop of water sizzles and easily evaporates. Add the pat of butter and let it coat the skillet. Pour the egg mixture into the skillet. Pull the eggs across the pan with a spatula and fold. Continue with this motion until any liquid egg is no longer visible. You want the eggs to be moist, but be careful not to overcook them.
Transfer to your plate or bowl, and add the pepper, sea salt and dried parsley. Finish off by sprinkling the goat cheese on top. Enjoy!
