Tropical Acai Bowls
Friends… Tell me I am not the only one experiencing a serious case of the Mondays today!
Over the weekend I went back home to Minnesota for my bridal shower, and felt so blessed to have so many of my closest friends and family together in one room. I had an amazing time, but man, it was hard to come back to Milwaukee! After being engaged for almost two years now, and looking forward to our wedding in October, I can’t believe everything is actually happening now! And so darn quickly! You better believe I am enjoying it all while I can.
And as I wait for that big day to arrive, I’m going to focus on taking things slow, relaxing into the events leading up to it, and taking care of myself (check out my top 10 stress management techniques here). With that being said, I took some time to reflect on my eating and exercise habits lately and noticed I hadn’t made one of my favorite blended concoctions recently – acai bowls!
So last week I took my Instagram followers behind the scenes, showing them how to make these Tropical Acai Bowls! In case you missed it, I am giving you a second chance to try out this bowl with the recipe below. Although the toppings aren’t overly tropical, you get the hit of pineapple and mango from the acai blended base, and it is delightful! Have you tried making an acai bowl yet? Tropical Acai Bowls
Makes 2 servings
2 Frozen acai packets
1 cup Frozen tropical fruit
1 banana
Water, as needed
Blend the above ingredients together in your blender. Pro tip: Run water over the frozen packet of acai for about 5 seconds to slightly thaw, then hit it with a rolling pin or a similar object to break it up into smaller chunks. This will help with blending and will ensure you don’t get icy chunks of acai in your finished product.
Top your two acai bowls with:
1 banana, sliced
10 Raspberries
5 Strawberries, sliced
Sprinkle of Chia seeds
Sprinkle of Cocoa nibs
Sprinkle of Coconut shavings
And that is it! Super yummy and extremely easy to make. One of the many reasons acai bowls are my favorite!
