Southwestern Cauliflower Rice

Lately I have been playing around with ways to fit more vegetables into my diet. Getting plenty of fruits has never been an issue for me, but I have found I am a little more picky when it comes to vegetables so it takes a bit more pre-planning. Enter in my Southwestern Cauliflower Rice recipe. Cauliflower, tomatoes, corn and spinach make this recipe a plethora of healthy vitamins & minerals. Incorporating healthy fats like avocado and feta cheese make the meal extremely satisfying and just plain yummy.

And an added bonus? The entire recipe from start to finish only takes about 15 minutes. I’d call that a win-win! Enjoy!

Southwestern Cauliflower Rice

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 2 cups Cauliflower finely chopped
  • 2 Tomatoes diced
  • 1/2 cup Corn
  • 1/2 cup Spinach
  • 1/2 Avocado cubed
  • 1/4 cup Feta cheese crumbled
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil
  • 1/2 tsp Cumin
  • 1/2 tsp Onion powder
  • 1/2 tsp Chili powder
  • Salt & Pepper to taste

Instructions

  1. Heat the oil in a skillet over medium high heat. Add minced garlic to pan, until slightly browned.

  2. Add tomatoes & corn to the pan, stirring occasionally until the mixture is well heated.

  3. Meanwhile, combine the cauliflower with all spices. Mix until well coated.

  4. Add cauliflower to the pan. Cook until the cauliflower is tender and entire mixture is well heated.

  5. Add spinach to the skillet at the last minute, stirring the entire combination together until spinach is slightly wilted.

  6. Pour cauliflower rice into a serving bowl, top with avocado and feta cheese. Serve hot.
