Recipe: Versatile Veggie Salsa
This week I am all about finding new ways to “re-purpose” my food, for lack of a better word. 🙂 This weekend I doubled the batch of this veggie salsa recipe, brought half to a party as a delicious veggie dip with chips, and the rest of the week I was able to use it as a topper on salads. It is super healthy, extra yummy, easy to make and to top it all off, budget friendly. I hope you enjoy it!
Versatile Veggie Salsa
1 can corn
1 can black beans
1/2 can diced tomatoes
Lime juice from 1/2 of a lime
Pinch of cumin
Pinch of chili powder
Salt and pepper (to taste
Fresh cilantro, chopped (to taste… I really load mine up, I love cilantro)
Ways you can use this veggie salsa:
- Add as a topper to salad with mixed greens, cheese and diced avocado
- Jared’s favorite way to eat this salsa is as a side to his scrambled eggs in the morning
- Mix with ranch dressing to make it into a healthy dip to bring to a party
- Pile on top of rice, add a protein, and serve with a tortilla (hello, Chipotle copy cat burrito bowl!)
