Protein Packed Pancakes
Happy Mother’s Day to all of my favorite moms out there (especially mine)!
I wish I could spend the day having brunch with my family, but I will have to wait just a few more weeks. Until then, I am just have to keep making these pancakes to ensure my skills are still in tip-top shape. 😉
These Protein Packed Pancakes are made with oats and cottage cheese in lieu of flour, which make them gluten free and a super healthy choice (but still oh-so-delicious). They are also very easy to make, because you simply blend all of the ingredients and fry them up. I can’t wait to make them for my mom. I hope you give them a try, too!
Protein Packed Pancakes
3/4 cup Old fashioned oats
1/2 cup Cottage cheese
2 Eggs
1 tsp Cinnamon
1 tsp Vanilla extract
1 tsp Maple syrup
1/4 tsp Salt
1/4 tsp Baking powder
Heat a skillet over medium heat. While you are waiting for the pan to get hot, add all ingredients together in your blender and blend until smooth. Once the pan is hot, add a tab of butter to coat the pan and to keep the pancakes from sticking. Pour the batter into the pan and wait 1-2 minutes. Small bubbles should appear in the batter and then start to pop. Once the pancake is lightly browned on that side, flip with a spatula and lightly brown the other side, too.
This recipe makes around 3 pancakes, so make sure to double the recipe for two people. Serve with butter and maple syrup, and enjoy!
