Pina Colada Smoothie

I don’t know about you, but I needed a little metaphorical sunshine in my life this week, especially with the recent onslaught of April showers. Enter the Pina Colada Smoothie.

This is a recipe I have been meaning to create for you for quite some time! When I am on vacation, a frozen pina colada or two is usually worked in the mix one way or another. I love the darn things, despite pineapple not being high up on my list of favorite fruits (odd, but true). This smoothie recipe is a bit on the healthier side, nixing the alcohol and slam of sugar. I hope you enjoy it as much as I do!

Pina Colada Smoothie

1 banana

1 cup frozen pineapple

1/2 cup plain yogurt

1/4 cup shredded coconut

2 tsp honey, optional

1 cup water

Blend all ingredients together until smooth. Makes enough for one serving.

Real life: My cooking is usually messier than this.
