Ooey Gooey Veggie Bowl
Oh, man! I love traveling but boy, does it feel good to be able to cook for myself again. I just got back from California on an amazing trip (more on that later this week) but there is nothing like coming home to my fiance, puppy snuggles and eating healthy, home cooked meals. Tonight I whipped up a giant bowl of sauteed veggies, and threw a couple of over easy eggs, avocado and cheddar cheese on top. I mean come on, that is pretty hard to resist.
Ooey Gooey Veggie Bowl
5 Cherry tomatoes, halved
4 Mini bell peppers, sliced
1 tbsp Olive oil
1 clove Garlic, minced
1/4 cup Black beans
1/4 cup Corn
Small handful Spinach
1/4 Avocado, cubed
1/4 cup cheese, cubed
2 eggs
Salt & pepper, to taste
Wash, then slice and dice all of your veggies. Heat a large skillet over medium high heat, and add olive oil to the pan to coat it. Add garlic to pan, and cook until fragrant. Add the tomatoes and mini bell peppers to the pan, and saute until soft. Switch the heat on the skillet to low, and add in the black beans, corn and spinach.
While you are waiting for the new additions to heat up a little bit, cook two eggs over easy on a separate skillet, also on medium high heat. When the egg whites set (and it no longer looks “snotty”), flip and cook on the other side for a couple of seconds. Put the veggie mixture into a bowl, top with avocado, cheese and finally the two eggs. Sprinkle with salt and pepper.
Don’t be afraid to mix it all up – it’s going to be messy but oh-so worth it! Enjoy, friends! Xoxo
Messy is best! I did something similar last night with turkey meatballs + veggies + butternut squash + sauce. YUM. Yours looks prettier though.
