Crockpot Spicy Beef Stew

It is a quiet, stormy morning here in Milwaukee. Perfect for wrapping up in a cozy blanket with a steaming cup of coffee, a candle burning and a good book. If you’re feeling purposeful, you may even feel like throwing on dinner.

This morning I am sharing my recipe for Crockpot Spicy Beef Stew; a hearty, healthy soup with a kick.

Don’t say I didn’t warn you – spicy is in the name for a reason, but I have listed tips for toning the recipe down just in case you need it. Either way, I can guarantee your house will be filled with wonderful smells all day. Enjoy, friends!

Crockpot Spicy Beef Stew

3 cups Potatoes, diced (approx. 2 large)

3 Carrots, sliced

1 Bell pepper, diced

1 Yellow onion, diced

1 can Corn (drained)

1 can Cut green beans (drained)

1 can Diced Tomatoes (with juice)

4 cups Beef broth

2 lbs Stew beef, diced

1 tbsp Italian Seasoning

1/2 tbsp Cayenne pepper

1/2 tbsp Paprika

1/2 tbsp Cumin

1/2 tsp Salt

1/2 tsp Pepper

Cook on high in your Crockpot for about 3-4, or on low for 6-8. The soup is done when the meat is tenderĀ and the potatoes and carrots are soft.

As noted, this recipe is not for the faint of heart! If you want your spice toned down a bit, cut the cayenne pepper and paprika measurements in half. If you are game for something with some heat, then by all means, full steam ahead! It will definitely warm you up on a stormy, cold night.
