Chocolate Covered Raspberry Acai Bowl
Eek! I simply cannot contain my excitement right now. I am currently on a flight to LA for my first ever Radiance Retreat hosted by Jill Coleman, Neghar Fonooni and Jen Sinkler! My weekend will be filled with: yoga on the beach, kettlebell training, Metabolic Effect work outs, great food, and wine (wine, wine, then more wine) with some pretty incredible women. Anyway… back to the real reason you are here. Let’s talk about this chocolate covered raspberry acai bowl.
If you are a fan of chocolate, coffee and raspberries, this is for you (and quite honestly, if you aren’t, I think we may have problems). I needed a serious chocolate fix earlier this week and decided to whip this bowl up for lunch. It totally hit the spot! Try it and let me know what you think!
Chocolate Covered Raspberry Acai Bowl
1 Frozen packet acai berry
1 cup Frozen raspberries
8-10 Blackberries
1 Banana
1 tbsp Cocoa powder
1/4 cup Coffee, brewed and chilled
Cocoa nibs
Run water over the frozen packet of acai for about 5 seconds to slightly thaw. Hit the acai packet with a rolling pin or a similar object to break it up into smaller chunks. This will help with blending and will ensure you don’t get icy chunks of acai in your finished product. Add the crushed acai, raspberries, banana, cocoa powder and coffee into your blender. Feel free to add more or less coffee to get your desired consistency. Blend until smooth. Top with blackberries, sprinkle with cocoa nibs and enjoy!
