Blueberry Maple Mango Acai Bowls
My case of the Mondays was saved this week by these ah-mazing Blueberry Maple Mango Acai Bowls. I had an awesome time this weekend with Jared’s sister Jenny in town for a weekend of wedding planning, and a surprise visit by a close friend of mine. The weekend was filled with lots of laughs, great food, endless drinks, fantastic company and plenty of late nights. It was tough to end the weekend, but it warms my heart to see old friends with whom you can pick up right where you left off, as though no time had passed at all. Jenny and I were able to share these bowls before she headed home, a great way to cap off a truly special time with friends and family!
Blueberry Maple Mango Acai Bowls
Note: Makes two acai bowls.
2 packets Frozen Acai Berry
1 cup Frozen blueberries
1 Banana
Splash of milk
1 Mango, diced
4-6 Blackberries
8-10 Blueberries (fresh, not frozen)
Sprinkle of Chia seeds
Drizzle of Maple Syrup
Slightly thaw the frozen acai berry packets by running them under water for about 5 seconds. Break up into pieces (my preferred technique = hitting it with a rolling pin, no joke). Add the acai to your blender, along with the banana, blueberries and milk. Blend until evenly blended and creamy. Scoop into bowls, and top with mango, blackberries and blueberries. Put the finishing touches on the bowl by sprinkling with chia seeds and drizzling with syrup.
