Baked Lemon Chicken & Asparagus
Over the weekend, I was able to spend time with family, relax, play games and cook a healthy meal for some of my favorite people. I decided to make a recipe that is easy to whip up, full of flavor but still very simple. I ended up with my Baked Lemon Chicken & Asparagus, and I will definitely be making it again soon.
Follow along with the recipe below, then check out my comments in the pictures after. I provide tips & tricks that may help you when making this meal for yourself! Baked Lemon Chicken & Asparagus
Ingredients
- 3-4 Chicken breasts
- 1 lb Asparagus
- 1 1/2 Lemons
- 2 tbsp Olive oil
- Salt & pepper to taste
- 1/4 cup Parmesan (optional)
Instructions

Preheat oven to 450 degrees.

Cut asparagus in half, adding to a 9x13 glass baking dish. Drizzle with 1 tbsp olive oil, salt & pepper.

Coat the chicken breasts with the remaining 1 tbsp of olive oil, as well as a bit of salt & pepper.

Cut 1 lemon into thin slices. Add the slices on top of the chicken. Squeeze juice from the remaining 1/2 lemon evenly over the entire pan of chicken & asparagus.

Place the pan in the oven and bake for 40 minutes. or until chicken is cooked all the way through (it should reach 165 degrees at it's thickest point).

Optional: When you have 20 minutes left in baking time, take the pan chicken & asparagus out, and sprinkle entire pan with parmesan. Place back in the oven for the remaining 20 minutes.

Serve the chicken and asparagus together, along with a side salad for a well-rounded meal.
Drizzle your asparagus with olive oil, salt and pepper, then push it off to the sides of your pan. Lightly coat each side of the chicken breasts with olive oil, sprinkle it with salt and pepper, and then leave it in the center of the pan surrounded by the asparagus.
Top off the chicken with your lemon slices, and place it in the middle rack of your oven. Halfway through the baking time (at about 20 minutes) feel free to add some shredded or shaved parmesan on top of the entire dish for a little extra flavor.
I prefer my asparagus on the softer side. If you like your asparagus crunchier, I would suggest baking the chicken by itself for the first 15-20 minutes, and adding the asparagus then (with about 20-25 minutes left in the baking time).
Pair the Baked Lemon Chicken & Asparagus with a fresh Avocado Caprese Salad and call it a day! Under 15 minutes of prep time for both dishes combined, and still under an hour to meal altogether. Enjoy!
