Beet Juice
Spring is officially here! And of course in Wisconsin we are expecting 55 degree weather tomorrow and snow a few days later.
Typical.
In light of the colorful blooms that are bound to be here soon (cough, cough) yesterday I decided to get equally colorful with my mid-morning snack. This juice has a little zing from the ginger but is mellowed out by the beets and carrots.
Just because you don’t have a juicer doesn’t mean you can’t enjoy the benefits of this super nutritious beet juice! Simply blend all of your ingredients and press through a strainer (the finer the mesh, the better) until you get all of the juice out.
Beet Juice
1 Beet
3 Carrots
5 Clementines
Dash of Ground Cinnamon
Pinch of Ground Ginger
Wash your vegetables and peel your clementines. Cut the carrots and your beet into smaller chunks to ease the juicing process a bit. Put the carrots, beet (leaves and all) & clementines through your juicer.
Set aside a cup (preferably with a lid) for your juice and sprinkle your cinnamon and ginger right into it. Once your other ingredients have been juiced, pour the mixture into your cup, shake it all up (or stir) and enjoy!
Don’t forget to reserve your leftover pulp. It can be used to add extra fiber in smoothies, to thicken up soups or it can be composted and used later to enrich the soil in your garden.
