Heat the oil in a skillet over medium high heat. Add minced garlic to pan, until slightly browned.
Add tomatoes & corn to the pan, stirring occasionally until the mixture is well heated.
Meanwhile, combine the cauliflower with all spices. Mix until well coated.
Add cauliflower to the pan. Cook until the cauliflower is tender and entire mixture is well heated.
Add spinach to the skillet at the last minute, stirring the entire combination together until spinach is slightly wilted.
Pour cauliflower rice into a serving bowl, top with avocado and feta cheese. Serve hot.
