Avocado Caprese Salad

This Avocado Caprese Salad might just be my new go-to lunch recipe. It is super yummy! Plus it packs in a ton of healthy fats and veggies. You can serve this salad as a main course by itself or as a side dish (as I did here, pairing it with my Baked Lemon Chicken & Asparagus). It’s totally up to you!

The dressing used on this salad is a basic balsamic vinaigrette recipe that I make at home all of the time! It is super simple, I almost always have the ingredients on hand, and it takes about .2 seconds to make. Just my style.

Please note: this salad does not use basil nor does it use a balsamic reduction so it is technically not really a true Caprese salad. Because I like to keep my recipes simple and made with ingredients that we can easily find or already have on hand, I decided to create this version instead. If you’d like, you can certainly tear up a 1/4 cup of fresh basil and incorporate it with the other mixed greens to get that same flavor & feel – but I promise, you won’t be disappointed at all with this one.

Avocado Caprese Salad


Prep Time 8 minutes
Servings 4 people

Ingredients

Salad

  • 3 cups Mixed greens
  • 2 1/2 Avocados diced
  • 2 Tomatoes diced
  • 1 ball Fresh mozzarella diced

Dressing

  • 1/2 cup Olive oil
  • 1/4 cup Balsamic vinegar
  • 1/4 Lemon juiced
  • Salt & pepper to taste

Instructions

  1. Wash mixed greens & tomatoes.

  2. Dice tomatoes, avocados and fresh mozzarella.

  3. Combine all salad ingredients in a bowl.

  4. Add all salad dressing ingredients together in a bowl, whisk until well incorporated.

  5. When you are ready to serve the Avocado Caprese Salad, pour the dressing over the salad and toss until evenly coated. Serve right away.
